Quick & Easy Baked Apple Pie Oatmeal

1/2 cup Trader Joes Rolled Oats (cooked following instructions on bag)
1/2 cup applesauce
1 apple diced into small chunks
Cinnamon to taste (I like a lot. I just shook some in until it tasted how I like it)
1 tbsp maple syrup, honey or agave
1 tbsp light brown sugar
1/4 tsp ginger
1/4 tsp nutmeg

1. Preheat oven to 325*F
2. Put all ingredients into a bowl (except brown sugar).
3. Spoon into 2 creme brûlée ramekins.
4. Put brown sugar on top
5. Bake for 15-20 minutes
6. Turn oven to broil and bake for an additional 3-5 minutes.
7. LET COOL. (You’ll burn your mouth!)
8. I topped mine with cream, but you could put any kind of milk, coconut cream, whipped cream….whatever tickles your fancy.
9. Enjoy!!

Recently, I had my first taste of Speculoos Cookie Butter from Trader Joes. By recently, I mean last Monday.

By Friday, the jar was almost completely gone, so I went back and got more.

Might've went a little overboard.

In any case- this stuff is amazing. It’s creamy, its smooth, it tastes like ginger snaps. WHATS NOT TO LOVE!? Ever since I took my first bite, my brain started running wild with baking ideas. Aside from smearing this all over bananas, apples, graham crackers, oreos, my finger, I was looking for fun and exciting new ways to have an excuse to eat it aside from with just a spoon.  I’ve been slowly working on compiling recipes for a cook book I would like to write, full of my favorite recipes that I have in my rotation. And then this happened….

I was really excited. Throwing things into this metal bowl. What else could I add to invite  flavor and texture into my mouth?! It was exhilarating!

So after 10 minutes of adding things into this bowl, and 15 minutes in an oven….

Cookie Butter Baked Oatmeal

This was born…. I cannot begin to describe how fantastic this tastes. Warm, cold…it doesn’t matter. You can eat it as is, I put some whipped up coconut cream on mine, Douglas ate his with cream cheese. The options are endless.

And now, you too, can have it.

Sarah Montana’s Cookie Butter Baked Oatmeal

1 1/2 cup Oats

1/2 cup Almond Flakes

1/2 cup Applesauce

1/4 tsp Cinnamon

2 tbsp brown sugar (plus extra for the top!)

1 tbsp sugar

1/4 cup melted Cookie Butter  (20-30 seconds in the microwave)

1 tbsp butter (or coconut oil)

1 heaping spoonfull of chia seeds

 

Preheat your hot box to 350*F.

Put a layer of parchment paper in a 6″x9″ glass baking tin, or spray 3-4 creme brulee ramekins with non-stick cooking spray.

Mix all ingredients until combined.

Pour into your baking dish of your choice.

Sprinkle brown sugar on top until a nice, even layer is covering your oatmeal mix.

Bake in the oven for 10-15 minutes, depending on your baking hardware.

Let cool, slightly, so you don’t burn the crap out of your mouth.

Serve & enjoy!

You can melt more Cookie Butter to drizzle on top, add a whipped topping, sprinkle with powdered sugar, serve with fruit. Whichever you choose!
